It is cooked according with traditions that date back at least to the Roman Empire time. The process, developed as a ”secret” of the wealthiest families and aristocrats of the Modena territories, takes place in a battery of small barrels for a period of at least 25 years

💌 How to recognize it? Seal and label of the special bottle, designed by famous automobile designer Giorgetto Giugiaro, are marked “Extra Vecchio” ("Extra Old"), the only adjective authorized for the Traditional Balsamic Vinegar of Modena DOP. The bottle carries a gold color capsule. The bottle carries the legal label of the bottling center and must be validated by a special numbered seal.
